Entry the first Written at the counter, before the first pour

Dear neighbor, a good morning is not found. It is made, and it is made slowly. It is made of water brought to its proper temperature, of beans roasted with attention, of butter folded into dough more times than seems reasonable, and of a chair held out for whoever walks in next.

That is the whole of our philosophy at Cambridge Square. We keep the kettle honest and the croissants warm. We pull cortados with care, we press crepes to order, and we hot honey our prosciutto bagels because some ideas are simply correct.

Come sit a while. The coffee is patient, and so are we.

A toast to the long mornings

For the warm months the gentleman raises his cup to two summer arrivals. A Stone Fruit Crepe, peaches and mascarpone under a lace of local honey, and a Cold Lavender Tonic pulled long over ice. Both are penned onto the board for as long as the season allows, and not a day longer.

The House Blend

The blend the founder pours for himself. Chocolate at the front, toasted nut through the middle, and a finish that behaves like a well-mannered guest. Roasted in small batches and bagged whole bean, so your kitchen can smell like our counter.

You will find us at Cambridge Square in Ooltewah, where the door is heavy, the chairs are soft, and the first pour of the day is treated like a small ceremony.
