Every exhibition has its centerpiece. Ours is a 12 ounce bag of the blend that built the house: chocolate and toasted pecan up front, a clean caramel finish, roasted in small batches and sealed while the crackle is still on the beans. The Gentleman signs off on every roast. He is very difficult to please. That is rather the point.
